A little while back I shared somewhat about my visit to Ensenada, Mexico during my multi day culinary journey with Princess Cruise Lines. There was no chance I could leave you hanging without sharing the best at any point solidified mango formula you ever will make.
To wrap things up, remember the bean stew lime salt rimmed glass! A staple in Mexican cooking, this flavoring is made with bean stew peppers, lime and salt. Adding it to these mango margaritas was enlivened by my movements to Cancun where merchants as often as possible walk the shorelines offering crisp pieces of mango showered with lime squeeze and sprinkled with stew lime salt.
The salty, fiery, harsh garnish is the ideal parity to the sweet and tart mango margs.
- 1/2 tsp chili lime salt to rim glass
- 4 cups cubed mango fresh or frozen
- 2/3 cup white tequila
- 1/2 cup simple syrup - at room temperature see below
- 1 orange juiced
- 2 limes juices
- 4 cups ice
SIMPLE SYRUP
- 1/2 cup water
- 1/4 cup sugar
INSTRUCTIONS
- Dip the rim of each glass in water or rub a lime wedge around the edge to moisten. Pour chili lime salt into a small plate and dip each glass to line rim; set aside.
- Place all remaining ingredients in a high speed blender and puree until smooth.
- Divide margaritas between glasses and serve with extra lime wedges if you wish.
