I love pancakes and I think they are probably the BEST breakfast food ever created. Don’t get me wrong, I love a good omelette and a crispy piece of bacon, but eating a pancake for breakfast is like going to a party at your breakfast table. You really can dress them up however you want, topped with fruit or drizzled with chocolate syrup. Yum.
INGREDIENTS
Sweet Cream Pancakes
- 2 Cups All-Purpose Flour
- 2 Teaspoons baking powder
- 1 Teaspoons Baking Soda
- 1/2 Teaspoons Salt
- 1/3 Cup Sugar
- 2 eggs
- 2 Teaspoons Vanilla Extract
- 3 Cups heavy cream
Birthday Cake Pancakes
- 1 Recipe Sweet Cream Pancakes (above)
- Rainbow Sprinkles
- Vanilla Ice Cream or Whipped Cream
- Maple Syrup
Strawberry Cheesecake Pancakes
- 1 Recipe Sweet Cream Pancakes (above)
- 4 Ounces cream cheese softened
- 1 Cup heavy cream
- 1 Teaspoon Vanilla Extract
- 1 Cup powdered sugar
- Strawberries chopped
- Graham Cracker Crumbs
- Maple Syrup
Peanut Butter Chocolate Chip
- 1 Recipe Sweet Cream Pancakes (above)
- 1/2 Cup Maple Syrup
- 1/4 Cup Creamy Peanut Butter
- Chocolate Chips
INSTRUCTIONS
Classic Sweet Cream Pancakes
- Mix all ingredients together. Heat griddle to medium high heat (about 300 degrees) and spray with cooking spray. Place approximately 1/4 cup of batter on the griddle for each pan cake. Cook for 2-3 minutes until little bubbles begin to appear. Flip the pancakes over and cook for another 2-3 minutes until golden brown.
- Top the pancakes with butter and maple syrup.
Birthday Cake Pancakes
- Follow the instructions above for Sweet Cream Pancakes, but after placing batter on the griddle, sprinkle the pancakes with rainbow sprinkles. Then flip and continue cooking.
- Top the pancakes with more sprinkles, butter, maple syrup and whipped cream.
Strawberry Cheesecake Pancakes
- To prepare the cheesecake topping, beat the softened cream cheese in a bowl until creamy. Add the vanilla and the powdered sugar a little at a time until incorporated. In a separate bowl, beat the heavy cream until peaks form. Fold the whipped cream into the cream cheese mixture.
- Follow the instructions above for Sweet Cream Pancakes, but after placing the batter on the griddle, sprinkle the pancakes with chopped strawberries. Then flip and continue cooking.
- Top each pancake layer with the cheesecake topping, more chopped strawberries and graham cracker crumbs. Pour on some maple syrup , if desired.
