Simple Mini Meatloaf Muffins are made with ground hamburger or ground turkey and beat with a delectable meatloaf sauce. They are simpler and more beneficial than customary meatloaf.

My mother made us meatloaf in a biscuit tin all when I was a child. It's so yummy cooked along these lines and it's additionally path simpler to make and quicker to cook the normal meatloaf! I especially love that this formula can be prepared toward the beginning of the day, or even the prior night, making dinnertime way less upsetting.

I adore the meatloaf sauce in this formula since it's scrumptious and couldn't be EASIER, with just four straightforward fixings: ketchup, dark colored sugar, dijon mustard, and nutmeg. You can set it up as long as multi week ahead of time, put away in the cooler.

These meatloaf biscuits are just 140 calories made with lean ground hamburger or around 120 calories made with ground turkey (that is including the sauce!). Ingredients :

  • 1 1/2 pounds lean ground beef (or ground turkey)
  • 2/3 cup panko bread crumbs
  • 1/2 cup onion , chopped
  • 1 Tablespoon barbecue sauce
  • 1 Tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg , lightly beaten

Meatloaf sauce:

  • 1/3 cup light brown sugar
  • 1/2 cup ketchup
  • 2 teaspoon dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions :

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  3. Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  4.  In the meantime, in a small bowl mix together all of the ingredients for the sauce.  
  5. Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
  6. Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
  7. Serve with mashed potatoes and any extra sauce.
